When we're preparing new coffee samples for cupping, we consider two primary factors as having the most influence over how each new sample will probably roast; origin and processing.

By grouping our coffee samples accordingly, we've developed a handful of profiles that let us produce high quality roasted samples for our cupping table reliably, efficiently, and often with only 100g or less of the coffee available.
